So back in 2010, father sold the Dodge Ram diesel (guess what he traded it for) and a few months later, he thought it was a good idea to get a 1996-ish Chevrolet K1500 (Note to people who don't understand Chevy truck slang: C is 2WD, K is 4WD.) I actually snuck a drive with it, and for some reason, the 5.7L motor in it felt.... Underpowered?
Is it possible to shoehorn an LS1/2 in it? And for some reason, it will not go into 4HI/LO even if it's indicating it is.

No need to shoehorn. The LS motors have the same footprint and the C/K truck is one of the easiest swaps to date. You can buy motor mount adapter plates and drop it right in. Most of the early transmission can even bolt up using a special flexplate combo or you can swap to a newer transmission. The only time consuming part is the wiring but even that can be sorted or outsourced if you don't want to spend the time on it.

I owned a '96 C1500 Silverado back in college. It was basically new, with some break in miles on it (the dealership let the football coach of the local college drive it as a "perk"). I loved that truck. And the engine ran like a mother.
Before you decide to swap engines, ask a mechanic what could be done to bring the engine back up to like-new condition. Wear and tear can reduce the performance quite badly, and it might be a hell of a whole lot cheaper to fix what you have and tack on some extras (air system, headers, cat back exhaust) to get what you're looking for.

the ls is smaller than the small block, plenty of room...you can buy kits for this swap, if I recall.

Really my 5.7 hauls ass. Though with my daily driver being a 1.6 litre my opinion might be a bit skewed.
